Coconut Chicken

I will go ahead and admit that this recipe is partly Martha Stewart's and then I added my own twist to it along with the coconut dipping sauce. I know sometimes entrees are better off without the sauce that comes with it but in this case I think my husband and I would agree that you are going to want the sauce. I also can't say that I've perfected the recipe but I thought that it was a good idea! I hope you like it.

Coconut Chicken with Coconut Yogurt Sauce
3 small chicken breasts
4 Tbs. Panko bread crumbs (Japanese bread crumbs)
3 Tbs. shredded coconut
1 large egg
1 tsp. flour
1/8 tsp. salt
fresh ground pepper to taste

First thing you're going to do is crack your egg and whisk it into a dish you will be able to dip your chicken in...


Then you're going to want to get your coconut and bread crumb mixture together. In another dish you can also dip your chicken into, you will need to then add your panko crumbs, coconut, salt, pepper to taste, and flour.


Then you're ready to start dipping. Dip your chicken first in the egg then press the coconut mixture into each piece and put on a foiled pan with some Pam.


After you're done and all your pieces are coated you might want to add an additional amount of coconut if you want more of that flavor...I added more!!
Pop those babies into a 350 degree oven for 15-20 minutes. You don't want to make your oven any warmer or else you will burn all your coconut.


While those are cooking this is when you can start on the dipping sauce.

Coconut Dipping Sauce
1/4 C. plain yogurt
1/2 a packet of Splenda or you could use a small amount of regular sugar
2 Tbs. toasted coconut (add coconut to microwavable safe dish and nuke it for 15-30 seconds, but keep an eye on it and turn every now and then b/c it can burn quick.)


Now simply put all ingredients together and stir together. Put into refrigerator until you're ready to serve the chicken.

Now time to plate....yummmmmmmy!!



I made some of that sweet corn that I bought fresh from the farmer's market the other day and I must say they are so good just warmed in a pot of boiling water with the number one ingredient...BUTTER!!

My husband is leaving for an interview tomorrow in Omaha so I will be going out to dinner with my girlfriend tomorrow. I'll have some time to think about what to make Thursday night. By the way I'm so excited I'm taking a Farmer's Market Grilling cooking class on Friday, I can't wait to share with you all I learn!

Orange Marmalade Chicken

Today is the first day I have cooked since I started this blog, oops! Tonight we had one of our friends over for dinner and in the summer I love to grill as often as possible. I think I discovered that you could use jams and jelly's when my friend Denise made this to die for dressing with raspberry preserves. So here is an attempt to incorporate another "jam" type food into a main entree. I hope you like it. Ryan and his friend ate it all and said it was good, I also thought it was good if I do say so myself :)

Orange Marmalade Chicken

3 Tbs. Orange Marmalade
4-5 small Chicken Breasts (or 2-3 large ones)
Enough Pineapple slices for each chicken breast
pinch of salt
Fresh ground pepper
1/3 Cup plain Yogurt
2 Tbs. Cashews
1/4 tsp. Thyme (optional)


First, add your pinch of salt and fresh ground black pepper to taste on your chicken breasts and pineapple and then in a small dish for grilling put 2 Tbs. of your marmalade.
Then set your pineapple and chicken breasts on a medium to low grill for a total of about 8-10 minutes, flipping both items at the middle of your time, and not forgetting to brush them with your marmalade. (Use it all...mmm so good!!)
In the mean time while your chicken is cooking in a small bowl combine your yogurt and remaining 1 Tbs. of orange marmalade to a small bowl then mix it all together and put in the refrigerator until you're ready to use it.










Do you have one of these?? If so then add your 2 Tbs. of cashews and chop until chunks remain but some of it is small pieces. If you don't have one I would use a larger knife to mince until the right consistency.

After your chicken and pineapple is done you are ready to plate your chicken. I also made green beans, mashed potatoes, and garlic bread to go with the chicken...It went well together. I didn't add the yogurt sauce on top of the boys chicken because I thought it might scare them...I spooned mine right on top (Sprinkle the cashews on top at this time also).





If you want, at this time you can add the thyme. I noticed after everything was eaten that my pictures aren't that great but you get the idea I think. And now is the time for you to enjoy your creation!!

Farmer's Market Day!


(Excited to go to the Farmer's Market)



So today has been such a great day. The weather is amazing here...others might say that it's too hot but after the long winter we had I am not going to be complaining at all about the warm weather. So to celebrate the nice weather I decided to go to the pool and get a little suntan. It was so relaxing. There is a little play area for kids and I decided to share with you this very interesting "toy" that is there...
Interesting huh? I think it's a little scary to be honest with you...

After that I decided to go to the Farmer's Market that our town has every Friday in the summer months of July through September. There were so many fun and interesting things that I saw there. They had...Bread...
Corn...

Sauces...

Peaches & Apricots and....



The list really does go on and on. I bought fresh green onions, sweet corn, and some homemade beef jerky for my husband!!
Yum!!!

I know this is supposed to be a cooking blog but there has been zero cooking since I started this blog which is of course a bummer. But I thought that I would introduce you to some o so yummy drinks for the summer. Hello to the Blogging World!


So today is my first post to my cooking blog. Still working out some kinks in the name and the design but I decided why not go ahead and start letting people know my intentions of this blog. With the name of it I'm sure it gives away some of my intent, but I do love to cook, I love pretty much everything about it except for the cleaning up part (but really who does). I have so many cook books, my husband would probably agree that it's a little out of control, sorry Ryan...

My intentions are to share with you what I'm cooking in my own kitchen, ask you what you're cooking and if you have any advice to make what I'm making better, and hopefully in the end it will motivate me to break away from the recipes; don't get me wrong I love using recipes, why because they are generally safe and I know what my outcome is going to be. But whenever you're cooking on your own there are so many outcomes that could come about and I want to explore those outcomes and perfect them.


Even if no one is interested in this particular blog it will give me something to do with all my thoughts about cooking and all the joy it brings to my life!

So here we go!!
